Day 5 on the bayou was a bit hampered by rain but work continued. Saying good-bye to our wonderful homeowners has been tough. What a wonderful group on people who opened their homes to perfect strangers (some stranger than others).

Our video today is from last night’s meal watching Kevin, one of the PDA volunteers, make our jambalaya in this really cool seasoned cooker. Kevin has volunteered for the last three years since workers rehabbed his mother’s home. He wanted to payback others for all they did for his family. This man has a heart for God and is truly a servant for the Lord. We will miss all the great people down here. For a special treat, checkout Kevin's Chicken Sausage Gumbo recipe below. Yum!!!

Kevin’s Chicken Sausage Gumbo

Ingredients:

1 Cup of Vegetable Oil

1 Cup of All-Purpose Flour

1 Large Onion

1 Chopped Bell Pepper

2 Stalks of Chopped Celery

2 Cloves of Minced Garlic

2 Pounds of Smoked Sausage

3 Pounds of cubed Chicken Breast

12 Cups of Chicken Stock (or Water)

Directions:

Stir the flour and oil in heavy pot until golden brown. Be sure to stir frequently. Meanwhile, in a 6-quart pot, add sausage, onions, bell peppers, celery, and garlic. Smother for another 20 minutes. Add chicken and cook until brown. Add roux mixture, chicken stock (or water) to sausage and onion mixture. Bring to a boil. Lower fire. Simmer for a half-hour. Spoon off any fat off surface. Cook 2 to 4 cups of rice. 1 to 2 serving of rice in a small or large bowl and pour gumbo over rice.
